I love that intense Matcha flavor without all the extra cream or sugar, or weak Matcha flavor that a lot of the commercial brands have now. I just got a new ice cream maker and wanted to try this recipe as my first batch. I followed it to the letter, using 3 cups of half and half. I have to say it turned out absolutely perfect!

For mixing the Matcha, this time I tried using my little milk frother. I use this to mix my morning matcha tea and it does a great job blending the matcha.

With this large amount of 5 TBS, I use about 8 TBS of milk at a time to give the frother more room to mix. It blends the matcha very well and I get no clumps and only very small ones left in the sieve, which I can easily reblend with more milk and pour through the sieve.

After tasting this mix, I found that Truvia provides a sweetness that is slightly different than cane sugar. OK, now onto the biggest difference I found using the Truvia.

With the cane sugar batch, the ice cream was hard but still creamy and scoopable. With the Truvia, the mix froze much harder and icier. It needs to be taken out and sit a bit so it softens enough to scoop out. I put mine in little 6 oz ice cream containers for individual servings, and those will need to thaw a bit before being able to use a spoon into them.
