Broccoli Cheese Casserole Recipe

Cook frozen broccoli florets in the microwave for half the time the package directions instruct. They'll continue cooking with the rest of the casserole. Store this casserole tightly covered in the refrigerator for up to 5 days. Reheat individual slices in the microwave, or reheat the remainder in the casserole dish covered with foil at °F for 20 to 30 minutes, or until completely heated through.

To freeze a fully cooked whole casserole: If you know you'll be freezing the entire cooked casserole, line the baking dish with foil, bringing the foil up over the sides. Assemble and cook the casserole. Allow it to cool completely. Cover the casserole in the baking dish in foil.

Freeze until just completely frozen through. Remove it from the freezer and pop the casserole out of the baking dish. Keep the foil on it, wrapping it around.

Add a second layer of foil and freeze for up to 3 months. To thaw, unwrap the top layer of foil. Pop the frozen casserole back in its original baking dish.

Yet, he'd make a broccoli casserole that is now my definition of comfort food. Since it was my favorite, my dad would make this when it was just him and me my mom and sister were allergic to the breadcrumbs.

And while it's technically a side, I'd usually ignore all the other food on my plate and just stick to the broccoli. It could not be simpler to make.

His "recipe" is not so much a recipe as it is an approximation of ingredients —measure with your heart! Rather than the broccoli casseroles that start with a can of soup, or include rice, chicken, or intricate cheese sauces, this one is just five ingredients and done in under 30 minutes.

Broccoli, softened cream cheese, and breadcrumbs are the basic foundations of the dish, and everything else is optional to elevate it even more. Creamy, cheesy, and crunchy, it's endlessly comforting. The combination of broccoli and cheese is just an instant winner, and the buttery breadcrumbs make everything better.

These days, when I riff on this recipe, I add sautéed garlic and onions to the broccoli or a little Parmesan or Pecorino to the breadcrumbs. My dad swears a pinch of nutmeg is necessary, so I always add that too.

Hi, Anne! If you just thaw the frozen broccoli and then bake it, it will be slightly soft, but still pretty firm. Most folks prefer a softer broccoli in the casserole, which is why we pre-cook it a bit before it bakes. Instead, drain off that extra water after you steam it or after you thaw it.

The lemon juice really brightens it up. Another variation I made was to substitute cauliflower florets with about a teaspoon of curry powder, THAT was super yummy too. Anyone tried with fresh broccoli? If so did you need to cook any before adding to casserole? How about roasting it with olive oil for short time then adding to other ingredients? You could use fresh broccoli just fine. I would steam it or blanch it a bit and drain it well before mixing it together with the other ingredients.

I make this except I use cream of celery. I also mash the broccoli to smaller pieces. This casserole is amazing! If you were to double the recipe does that affect the time it needs to be cooked? It shouldn't affect the baking time much, if at all you may just want to allow an extra 10 minutes or so, just in case.

Well, it's happened. Now even though I love to cook and cook all the time, the task of taking on my first Thanksgiving dinner still makes me a tad bit nervous.
