Red lentils cook quickly in the Instant Pot! Great recipe! I made it my own by the following alterations: I used chicken stock and roasted the garlic, cauliflower and carrots in the oven before adding them to the stock.

I had a red onion so used that instead, along with frozen ginger Trader Joes. Delicious — was looking for a way to use up a cauliflower and the rest of the ingredients were also already in the house — big win!

Yes, a high-speed blender will make it more creamy! For the color, using chicken broth was likely the difference there. We used vegetable broth with tomato paste in it, which gives it a red tone.

Quite bland, this page used to be so good years ago, needed lots of TLC, I added fresh coriander and extra cumin, ground coriander and garam masala to save it. I should have known not to trust using curry powder for a decent recipe 😆 fortunately there are so many better pages for recipes.

This was super satisfying and filling. Some tweaks: I made a traditional mirapoix with celery, carrot and onion. Added 1 extra cup of veggie broth, and used about 4 cups of fresh riced cauliflower to make blending easier. Garnished with chopped cilantro, a swirl of coconut cream, and a shake of pepper.

Accompanied by whole wheat baguette broiled with Earth Balance, garlic and EVOO, and topped with hummus…DINNER! Thank you as always!

This soup is great! I used green lentils what I had on hand and let them simmer for 20 minutes. I only blended half because I like a chunkier soup. An earthy spice pot that's low in fat and calories.

Use your favourite curry paste along with mustard seeds, turmeric and coconut yogurt. Heat the oil in a large saucepan and cook the onion until soft, about 5 mins. Add the curry paste, spices and lentils, then stir to coat the lentils in the onions and paste. Pour over the stock and simmer for 20 mins, then add the cauliflower, potato and a little extra water if it looks a bit dry.

Simmer for about 12 mins until the cauliflower and potatoes are tender. Stir in the yogurt, coriander and lemon juice, and serve with the brown rice.

Just cook the curry until the cauliflower is fork tender. You may need to add a splash of water or broth if it gets too thick. The curry is on the thicker side and it does tend to stick a little if not stirred.

Easy Cauliflower & Lentil Curry (Vegan) - Jo's Kitchen Larder

Serve with rice, warm naan, or chappatis. Heat 2 tablespoons oil in a large saucepan over low heat and cook onion, stirring frequently, until soft and translucent about 10 minutes.

Add ginger, garlic, coriander, cumin, and turmeric and cook, stirring continuously, for 2 minutes. Stir in lentils and pour in vegetable stock. Bring to a boil, reduce heat, cover, and simmer gently for 10 minutes.

Meanwhile, heat the remaining 1 tablespoon oil in a skillet over medium heat and cook cauliflower until lightly browned, 2 to 3 minutes. Stir cauliflower, coconut milk, and carrot into the lentil mixture. Bring the curry back to a gentle simmer and cook until vegetables are tender, about 10 minutes.

Stir in green beans and cook for an additional 3 to 4 minutes. Stir 3 tablespoons cilantro and lemon juice into the curry.
