The high resolution birds eye view cameras also made it super easy to know what was around you at all times. It also would NOT be a trip to Kenora without a stop at The Blue Heron for ice cream. This sundae made me so incredibly happy. Speaking of happy!

I guess I should talk about moving. I had some friends over last week to show them my new digs and one brought over this incredible and I do mean incredible lentil dip. I immediately demanded the recipe and am posting it for everyone to enjoy! Combine lentils, red pepper, green onion and currants in a large bowl.

Cover and refrigerate overnight to allow for all the flavours to marinate. Seriously — this dip is the BEST!! A slight curry flavour with a sweet hint of cinnamon.

This is just making and healthy! There is no need to worry about how long it keeps. Rather, worry about how fast it will disappear. Amazing dip! My 33 yr old daughter says no chips or crackers needed, just grab a spoon!

I tweaked it to suit our tastes. Red lentils are perfect for this dish because they cook very quickly, are nutritious, and make a surprisingly delicious substitute for hummus!

salt 2 Tbsp. freshly squeezed lemon juice 2 Tbsp. cayenne pepper Use more or less, according to your taste. chopped cilantro or parsley leaves 2 tsp.

ground cumin 2 Tbsp. extra-virgin olive oil Garnishes : Olive oil, cilantro or parsley leaves Directions : Rinse the lentils with cold water and drain. Sort through lentils, removing any foreign particles. Place the lentils, bay leaf if using , and 1 tsp.

salt in a medium saucepan. Add about 4 cups of water to cover the lentils. Bring to a gentle boil over medium-high heat, stirring now and then. As a foamy residue rises to the top, remove and discard it using a slotted spoon. Cooked, drained red lentils Reduce the heat to medium-low and simmer gently until the lentils are very soft and tender, about 10 minutes.

Before draining the lentils, save some of the cooking liquid. You might need it later to thin-out the dip. Drain the lentils in a fine-mesh strainer.

Discard the bay leaf if used ; allow the lentils cool for about 10 minutes in the strainer. Seasonings mixed and ready to use In a small bowl, mix together the lemon juice, red pepper or tomato paste, cayenne pepper, garlic, cilantro or parsley , cumin, and olive oil.

Set aside. Place the lentils in a food processor. Add the blended seasonings. Process until smooth, stopping once or twice to scrape down the sides of the bowl.

Adjust seasonings, if necessary, adding salt if needed. Transfer dip to a serving bowl. Cover and refrigerate at least 1 hour or up to 24 hours before serving allowing the flavors to develop.

My love of Trader Joes runs deep. I have a few much outdated blog posts here and here of my favorite Trader Joes products that really needs updating. Did I mention this recipe only has three ingredients?

This recipe comes from my friend Eliza. She lives in California but spends a ton of time in Park City. A lot of years back too many to remember she drove to Utah and with her brought a Trader Joes haul.

She follows this exact recipe, adding a bag of arugula just before serving. It takes under a minute to prepare, tastes better as it sits, and like the MacGyver of recipes, it doubles as a dip or a salad! It will last in the fridge for days and can be served either cold or at room temperature.

I tweaked it to suit our tastes. I added more cumin, more curry, chopped fresh cilantro, mint, and basil, and a generous dash of sriracha sauce.

Love this recipe but I want to make it to take to a cottage with friends and am wondering how long it will last in the fridge? I had something similar at book club recently, so I went looking for a recipe. I made this version recently, and it was pretty delicious.

The black currants really make this dish. However, I might try using white wine vinegar or lime juice or maybe both?
