Right on point! What a delicious and easy way to prepare a a quick chicken meal! I had all the ingredients ready to go and served it up with roasted broccoli — cooked at the same heat in the oven — and some leftover long grain rice, peppered, with a pat of butter.

Hi Laura — glad you enjoyed this chicken recipe as part of your meal prep! Hope that helps! Made this yesterday. A fab variation on the baked chicken breasts. Love it. The best chicken recipe staple!!!! I made this first the first time on a Monday and had leftovers for lunch the rest of the week and it tasted just as good.

Just remember, the longer it marinates, the more flavorful the chicken will be! Leftovers can be stored in a sealed, airtight container for 3 to 4 days in the fridge. I love adding this leftover chicken to my salads for easy lunches! You can also freeze these chicken breasts for up to 4 months in the freezer and defrost in the fridge overnight before reheating.

If you are already using chicken that has been previously frozen and thawed out, I do not recommend freezing again. Here are some of my favorite side dishes to serve with this delicious chicken!

You could also simply serve this over brown rice , quinoa or cauliflower rice for a simple dinner. I love seeing all your delicious recreations!
