My kids are not really picky eaters, but they have their days too and it is a lot easier for me to go with easy recipes with rich, complex flavors that are not too complicated. Peel and cut the sweet potatoes into 1 inch cubes. Slice them vertically into segments of about 1 inch.

Slice each of those segments into wedges and then cut them into cubes. Heat the oil over medium high heat on a cast iron skillet.

Add the sweet potatoes to it. Spread them to as much of a single layer as possible, so all of them are touching the skillet. Cover and cook for 8 - 10 mins, stirring them every once in a while. Season with a little salt and pepper at the min mark. Cook for 8 mins if you want them to be cooked enough and have a bite to it.

I like to cook them for 10 mins when they are a little softer. In the same skillet over medium high heat, add the onions and garlic.

Saute for 2 mins or so till the onions start to soften. Now add the peppers and let them cook for mins, till they start to soften as well. Toss in the kale and cook for about 3 mins, till it wilts. Bring the sweet potatoes back into the skillet and give it a quick gentle mix.

Lower the heat to medium and let it all cook together and get all the flavors infused, for about mins. The best thing about this sweet potato skillet recipe is that it is so very versatile. Here are some ways to enjoy it. Rachel Thursday 24th of October I LOVE kale and black beans, but never thought to put them together!

I liked, and so did my husband; served w sweet potato and ww pita; makes a good amount! This was perfect for me because I had kale, red bell peppers, carrots — all from my CSA that needed to be eaten. I put some black beans in the slow cooker in the morning, so they were ready to go by the time I was ready to make dinner.

The whole family loved it! This was amazing! I have never massaged my kale before. I wish I had even though I felt a little silly. I am recovering from pancreatitis and require a no fat, non meat diet for awhile. I am thrilled to have found your blog because I love to cook and the limitations this puts on my cooking and eating is literally wasting me away.

I like the ingredients you often use like kale, quinoa , beans and such. I am so happy to have these new choices. I may become vegan if the pancreatitis becomes chronic. Well, it was delish! No problems there whatsoever. This was great, thank you! I really like your method of rubbing the kale with the dressing.

I forgot to add garlic to the quinoa so I added it to the dressing. Also, I used left over adobo sauce instead of the two chili powders you recommended because I had some leftover in the fridge.

My fiance and I loved our lunch, and I will definitely share this with others. This is so good — I love kale, and quinoa, and chia, and putting them together is superfood nirvana!

A few years ago I searched for a recipe similar to a salad from Starbucks I had fallen in love with. Thank you Susan! Well, I learned a valuable lesson and I will not make your rating suffer because of it.

When you said the longer the better for the kale massage, I obviously took it too far and had mushy kale. Not good. I would have preferred bitter kale to mushy kale. I have had success in the past, but pretty much ruined this dinner.

Lucky for me, my husband was a good sport and understood my mistake so we still made a meal out of it. I think I prefer your other kale recipe with the spicy pumpkin dressing if it is fair to say with my mistake. Your email address will not be published.

I'm pretty sure that you will never find Cuban black beans in Cuba with kale in them. But in the interest of using up a large amount of kale we found ourselves with last week, and with the desire to add some green vegetables to starchy beans, kale was added to these deliciously simple Cuban Black Beans.

You can skip the kale if you prefer, but I like hiding vegetables in all kinds of things for some reason. Then you can feel nominally better about eating a taco consisting of one tortilla and a big scoop of Cuban Black Beans. Because, ya know, kale.

We are in the early days of planning some sort of 30th birthday trip for this summer. Last year we started with thoughts of 2 weeks in Germany and Austria, then started considering Zimbabwe with a friend who grew up there, or maybe Serbia, or perhaps we'll just go back to Japan for two weeks we were all over the place.

But then when I was making some Cuban Cilantro Chicken and realizing that I don't know much about Cuban cuisine, I thought, hey, we can go to CUBA right now, and that might not be the case for much longer, so we should probably go there. Plus, so much cheaper and closer than all the other options on the table.

Now everyone go to your favorite flight-purchasing site and search for flights to Havana, Cuba. Just kidding, don't bother because you probably won't find anything. Unless your favorite site is Spirit Airlines, which shouldn't be anyone's favorite site or airline.

Apparently it's not that easy to find or purchase a flight to Cuba, which makes me nervous that airlines are going to start fading them out by summer or possibly canceling trips on people.

I know JetBlue flies there, and when you do a quick search it seems like there are lots of flights, but if you click through to most of those websites those itineraries are no longer available. As of January 20th, I think we officially live in the Twilight Zone. Anyway, Cuban Black Beans are super yummy.

Soon to be followed by the most delicious Cuban cilantro-orange chicken - stay tuned! Vegetarian : Yes Paleo : Er, sorry, but they're beans. No gluten and no dairy though! I just made this recipe and it tastes great. I substituted garlic powder for cloves because I did not have fresh garlic.
