I was happy I listened to my instinct with the spinach, because I had to pick through it quite a bit. The flavors of this recipe reminded me of my favorite pasta Florentine dish from a restaurant where I waitressed in high school and college.

The chef there always added sambuca, and I kept thinking that I would love that little addition the next time I made this recipe. I knew my son wouldn't have enough time to eat everything in his lunchbox and there wasn't enough room to fit an entire apple, so I packed away the remaining slices for later.

I also roughly chopped just a few blueberries so we could make a few plain and a few blueberry flavored. We also ended up finding some fun sprinkles in the pantry, so we did a few "Halloween funfetti" ones as well.

The idea of making a big stir fry on a sheet pan sounded very appealing to me. I also needed a recipe that was even quicker and easier than normal, because my daughter had a dance clinic right at 5 p.

I must have missed adding in a bell pepper in the grocery order, because the recipe calls for two. However, after all was said and done, I don't think it really mattered. I would say I had the same result, but I decided to live on the wild side and go with it anyway. I weighed out the ingredients, and while I boiled the tortellini for 2—3 minutes, I added all the other ingredients into the skillet.

In the end, I realized I was supposed to put the cheese on top and let it melt under the broiler. I ended up mixing mine into the sauce, whoops!

I also think my kids just prefer the texture of sprinkled cheese rather than cheese that is a little crisped. Next time, I would play with the seasoning a bit more on this one. I was expecting my first bite to be packed with flavor, but it ended up being more bland than I anticipated.

I wanted to round out the meal a bit, so I quickly tossed just a few eggs in my air fryer degrees Fahrenheit for 12—15 minutes.

I wish I had more time to let them cool, but it was a school day — so I had to make a parent sacrifice and give up on having future fingerprints so that I could peel the eggs in time. I don't recommend this method.

At the same time, I knew I wanted to bulk up dinner in some way. I instantly thought of fresh baked bread, but I didn't have any yeast. Instead, I found a No Yeast Bread recipe and made a quick loaf in about 30 minutes.

And this is how the whole meal turned out! As I said, my gnocchi lost its nice shape after I put it in the fridge for a bit, but the flavor was great. Out of all the meals I made in the week, this was the one I was most proud of! Not because it was "the best" one or "most professional", but because I was proud of myself for trying and learning something new!

On Thursday morning, I decided to make one of our favorite breakfast treats: Stuffed Bagel Balls. This recipe makes the bagel dough with Greek yogurt for extra protein. Once the dough is made, you put a bit of cream cheese inside the dough ball, then finish with what ever topping you like.

This time, I chose everything bagel seasoning — but I've also done cinnamon-sugar in the past. We had a relaxing morning and then it was off to school! Thursday morning, we went through the entire gamut of home activities: chalk, cleaning, playing in the yard.

Then we were ready to test our wings a bit and we went to the garden store to look at some new flowers for summer! Happy to say our entire outing was a success and we had no accidents! What a relief.

Once the ingredients were chopped and on the sheet pan, I coated everything with butter, garlic, and Old Bay. Everyone else had nice, hearty bowls of oatmeal. I decided I was going to make homemade "happy meals" for dinner. I made a bread coating for the chicken using spices and the Ritz crackers in my food processor.

I then did a quick coating of cornstarch, egg, and then the cracker coating. We even ended up having leftovers from this meal! By Saturday, everyone was a little sour my son got to have the last few bagel bites, including him.

How dare he eat the last ones and not save any for I don't recommend this method. As I mentioned earlier, I really try and fill our mornings with fun activities, even if it's just walking to the playground, a small hike, or a structured class.

If your area has a local recreational center, I highly recommend looking into it. Sometimes rec centers even have scholarship opportunities so all families can be included. I also knew I needed to make this recipe fairly quick since I was using the other half of the chicken thighs from earlier in the week.

I started by browning the chicken thighs, removing them, cooking veggies in that same pot, making the sauce, and then finishing by adding all the ingredients back in together. Moments later, a small construction crew knocked on the door to fix some flooring in the kitchen.

I spent the morning playing puzzles, reading stories, and doing a quick workout with the girls i. I grabbed some apple from the fridge that was leftover, some blueberries, and celery and started getting it onto plates.

By the time I was finished, I was able to use my stove, and I quickly heated some meatballs. By this time, my husband made it home for lunch, and I suggested that he should eat more than just the meatballs, but to each their own!

I've gone from never making a slider in my life to being an ultimate fan in a very short window. What is so appealing to me is that they are extremely easy to put together and they're something fun — which is why I usually make them on Friday nights!

Side note: For some reason, I put out a yellow pepper in this picture instead of my yellow onion. I thankfully noticed before I started cooking! I sliced through the slider buns, put them on my sheet pan, spread the meat mixture on the top, sprinkled the cheese, and that was all it took!

About 20 minutes in the oven, and we were eating. One of the parties was a painting party, which I thought was such a fun and unique idea!

My kids absolutely loved it. My middle kiddo came home stating that her next birthday would be the same thing. In a normal circumstance, I would be worried that one slider each wouldn't have been enough for a full dinner. However, I saw my youngest walking around with a stack of about six cheese slices at the party, so I thought it was probably OK that we kept things lighter.

Some of the crepes I filled with jam, and others I did a jam, cottage cheese combo! Crepes are one of my son's favorite meals, so he was particularly excited. This recipe does call for ground turkey or chicken; however, my ground beef was on sale for half the price, so I went with ground beef instead!

Lunch at home was grilled cheese one more time, and I got to work on planning and shopping for the week ahead of us! The hard reality is that with rising costs of, well Just keep in mind the main takeaway of planning, budgeting, and organizing.

And one last takeaway: Never let anyone make you feel bad for making a budget! People create budgets for all different reasons — necessity, savings, student loans, retirement, investments, and it's something you can feel proud of. You got this!

Thankfully, one of my family's favorite breakfasts is pretty hands off and quick to prepare: oatmeal! This one was simple with just a bit of brown sugar.

For my son's lunch, I boiled a few frozen meatballs in some broth and put them in the thermal area of his lunchbox to keep warm. I also packed some celery and apples, per his request. You can completely customize these depending on your family's pancake flavor preferences!

Once we got back on track, things came together quickly. I made the pancake batter and then let the kids give it a stir. The recipe states this should make 24 mini muffins, but we ended up having around 36!

It also says you can store these in the fridge up to a week, which was perfect because that's exactly what I intended to do. This recipe was cooked in two phases — first the chicken, carrots, and peppers. Then all the rest! I also ended up having to cut everything into smaller pieces for my daughters.

On a normal day, I do my best to get the kids outside after breakfast. I find that my kids have better days if we make sure to spend a good amount of time outside each day.

I ended up having a last-minute lunch meeting pop up once we got home, so my husband and I just reheated the stir fry and I cooked some meatballs on the stove for the kids. I served these with carrots, apples, and blueberries!

I've made yeast-free recipes in the past, but I definitely prefer a recipe that includes it! The first steps of this recipe are to mix warm water, yeast, and sugar. I then used the dough hook on my mixer to combine the rest of the ingredients.

I shaped the dough into a loaf pan and set it to rise yet again! Everyone was excited for this afternoon snack, and the house smelled amazing. Not pictured is my frozen tortellini that I forgot to take out for the picture! When I was inputting my groceries for delivery, I found a larger bag of tortellini for nearly the same cost as some other smaller, brand name bags.

I opted for the bigger bag so that I could have leftover for lunches later on in the week. Although it was a mistake, I think mixing the cheese in was a better choice for my family. As soon as my kids see any golden brown, they say the cheese is burnt and won't eat it.

After moving, grooving, and singing our hearts out, we were hungry. Thankfully, we had a decent amount of leftovers from the night before. Earlier in the morning, I had packed my son's lunch box with the same meal.

In what revealed itself to be a theme for my week, this recipe is made in one pot! I ended up sprinkling a bit of additional Parmesan for a salty little kick! Friday started off a bit chaotic as I tried to get my son out the door for school.

I quickly made up some scrambled eggs and called it good. Our normal lunch time was approaching, and the work in the kitchen was still wrapping up. I knew I needed to keep things simple. It took me a few moments to dice my onion and bell pepper, and then I sautéed them.

I gave the roast beef a rough chop and added it to the pan. A bit of broth and a gravy packet made a nice, thick consistency for everything once it was all put together.

Budget for it, and consider incorporating it into your weekly menu to keep things manageable and enjoyable. If you resort to eating out as a backup plan, you will find yourself eating out more than you really want.

A good backup plan for dinner at home are simple sandwiches or boxed or frozen meals. I like to also plan eating out or takeout for specific days to give myself a break from cooking. For instance, we order pizza from different restaurants on Friday nights. Friday night, pizza night! MOM TIP: Create your weekend meal planning ritual and enjoy the process by staying organized.

Every efficient home mangement system works in a beginning and ending cycle. Instead of trying to remember specific ingredients, this shopping list will ensure that you purchase everything you need for your planned meals and avoid buying unnecessary items.

If you want to take it one step further, you can organize your list by grocery store sections, such as produce, dairy, and meats, to make your shopping trip more efficient and enjoyable.

This works great especially if you have a specific grocery store you shop at frequently. This will help you avoid buying duplicates and ensure that you utilize the ingredients you already have. Check your pantry, fridge, and freezer for items that can be incorporated into your meal plan. Buying in bulk can be a great way to save money and reduce packaging waste.

On the plus side, buying in bulk often offers lower prices per unit and reduces the amount of packaging needed. Sometimes I might buy a little extra for just in case of emergencies such as sickness or a busier-than-usual schedule.

If you opt-in for buying in bulk, I suggest only purchasing non-perishable items or ingredients that you use frequently and making sure you have enough storage before bringing items home. Grocery delivery and pickup services have become increasingly popular and can be a convenient option for busy moms.

These services can save you a lot of time and energy by delivering groceries right to your doorstep or having them ready for you to pick up from the store. However, there are some downsides to grocery delivery or pickup you might want to consider. Delivery fees and service charges can add up quickly, which of course will increase your grocery budget.

Also, you may not have the same level of control over selecting your produce as you would in-store. You would hope the person selecting your produce would only choose the best but there is no guarantee. To determine if grocery delivery is right for you, weigh the convenience against the potential costs and limitations.

Here are a couple of grocery delivery services. MOM TIP: Make your grocery shopping trip more enjoyable by shopping at stores that feel more like a luxury experience instead of a place you dread.

I personally prefer smaller stores like Aldi and our local produce market. The only other hard step is being consistent. When a system is obvious, it means it is easily visible or apparent in your daily environment.

An obvious system is one that is prominently displayed or cues you to take action without much effort or conscious thought. This increased visibility and organization helps make the desired behavior eating according to the meal plan more obvious and accessible.

When a system is attractive, it means it is appealing and enticing to you. James Clear suggests that if a habit is associated with positive emotions, immediate rewards, or personal satisfaction, you are more likely to be motivated to repeat that behavior and form a lasting habit.

We can apply that positive reinforcement to any systems or processes for completing tasks we create in our homes. Your new meal planning system will provide you with several immediate rewards.

First, you find relief from having to decide at the last minute what to cook every day. Consistency is a big contributing factor for becoming an organized person and when your systems and habits are attractive consistency is more achievable.

Involve the kids. Beyond planning the menu, let the kids help you pick out ingredients at the supermarket and prep meals come dinnertime. Plan theme nights. Theme nights are a lot of fun, especially for the kids. And it makes planning the menu easier because you know exactly what kind of recipe you need for every night.

Some ideas for theme nights: Meatless Monday , Taco Tuesday , Wacky Wednesday eg. Breakfast for Dinner Night , Pasta Thursday , Fish Friday. It just requires some forethought and the motivation to do it.

That definitely makes things tough, but my point about not being a short order cook applies to spouses as well. Figuring out all the meals ahead of time allows me to save time and stick to a budget each week. This also includes getting creative with leftovers. Sometimes, eating leftovers all the time can get old, but I try to remember that I can always use different components of my leftovers to create new meals. For example, this week I was able to find a variety of cheeses, ground beef, chips, and many pantry and produce items on sale.
